The real stuff is phenomenal. It’s a bit pricier, but so worth it.
Maple syrup goes well with a lot of things. Pork, eggs, squash (especially butternut)

Maple syrup and squash? Do tell. I have a great Thomas Keller recipe that calls for honey in a squash soup and it’s fantastic. Never would have thought of that combo.

How much syrup do you finish with? A teaspoon? Tablespoon? 1/3 of a cup?

All depends on the amount of soup. So for like 3-4 litres of soup, 1/3 of a cup is a good place to start, taste and adjust. It’s all about how much you like

Good meat, REALLY hot grill.
Marinate it in:Garlic, olive oil, and dijon mustard (like a tea spoon). RIGHT before you grill it, season with salt, pepper and steak spice.

Have you ever done a cooked/not cooked pepper taste test?
Escoffier says pepper turns bitter/off if it’s cooked and should only be applied to foods after they’ve been cooked.
I always season my meat with salt and pepper before grilling, but I’ve never done a taste test to see if there’s anything to Escoffier’s position…

Yeah, I always do too and then about 10 minutes into the meal I realize that I’ve once again applied the pepper prior to cooking.
One time I’ll remember and pre-season one protein with just salt, another with salt and pepper and then do a taste test to see if there’s anyting to Escoffier’s theory.

Helm didn’t get a sniff of the NHL ’til he was 21 (7 games) and only played 16 this year as a 22 year old…something to be said for keeping your kids in the minors.
