The names that plop out for me are Christian Erhoff, who played for the Boston Bruins last season and Marcel Goc who last played in the NHL in 2014-15 with the St. Louis Blues. Marco Sturm is a longtime San Jose Sharks player who was included in the Joe Thornton trade, who had his final NHL season in 2011-12 with the Florida Panthers.

The Germans last competed in the 2010 Winter Olympics, where they finished 11th. They haven’t won a medal since 1976 where they took bronze.
